Make this salad a day ahead of time and enjoy for your lunches during the week. It's full of crunchy veggies and tons of flavor!

| 1 | Place lentils and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until tender. Drain well and cool slightly. |
| 2 | Combine lentils with remaining ingredients. Chill for 8 hours then serve. |
