Make this salad a day ahead of time and enjoy for your lunches during the week. It's full of crunchy veggies and tons of flavor!
Ingredients:
1/2 cup, uncooked lentils
1 cup, water
1 cup, diced celery
1 cup, diced onion
4 cups, finely chopped purple cabbage
1 cup, diced green bell pepper
1 cup, diced red bell pepper
2 large carrots, grated

Dressing:
3 Tbsp, canola oil
1/2 cup, white vinegar
1/2 cup, sugar
Directions:
1 Place lentils and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until tender. Drain well and cool slightly.
2 Combine lentils with remaining ingredients. Chill for 8 hours then serve.
3 ENJOY!
