Someone posted this recipe this week in a blog but I wanted to add it here. This week I tried this and it has been an awesome lunch.

Salmon fillet (6 oz) I used 5 oz since I am trying to cut back on portion sizes
2 slices of lemon per fillet
1 tbl of white wine per fillet
2 tbl of Lemon juice per fillet
2 tsp of capers per fillet

You take each fillet and put it on a piece of aluminum foil large enough to wrap around and seal. Add the ingredients above and then wrap up the fish making sure the foil is sealed. Depending on the thickness of your fillets cook on the grill for between 6 and 12 minutes.

I had this with Spinach salad that was very simple

Spinach, Parmesan cheese (1/2 tbls per serving) Feta cheese (1/2 oz. per serving) and my homemade honey dijon vinaigrette dressing. I will have to post that recipe later since I don't have it all in my head. :-)
