[This may sound a little complicated, but it's my family's favorite way to do salmon]
This recipe makes 2 servings.
Salmon glaze: Mix 1 TBS brown sugar, 1.5 tsp lite soy sauce, 1 tsp mustard.
Broil 8 oz of salmon for 8-12 minutes. Brush with glaze during the last 2-3 minutes of cooking.
Vegetables: Thinly slice 1 c. carrots, 1 onion (white or yellow), 1 bell pepper (any color), garlic, zucchini, or any other mixture of vegetables you like. Stir fry them in 2 tsp olive oil over med-high heat until tender-crisp.
Rice: 1 cup cooked brown rice (I use Boil-in-Bag).
Sauce for veggies & rice: Mix 1 TBS brown sugar, 1.5 tsp lite soy sauce, 1 tsp mustard, 2 tsp white rice vinegar. Pour over cooked veggies & rice (I do this after plating).
Serve w/ small green salad w/ 1 TBS fat free dressing.
