What are some veggie recipes you have that take the boringness out of eating them? I smash up cauliflower with garlic, grated parmesan and spray butter. I put garlic,and a little bit of olive oil on my chopped spinach and green beans. Carrots in my mashed potatoes. I add almonds and red onions to my green salads.

I love broccoli. I prepare a salad with it by adding raisins, sunflower seeds, red onions, light mayo, a little splenda and a low-fat shredded cheese. Mix and enjoy!! I also like the following recipe: 2 bunches broccoli, cut into 2 1/2-inch long florets 1 medium shallot, roughly chopped 1 pint cherry tomatoes, whole 3 cloves garlic, roughly chopped 1/2 teaspoon red pepper flakes 4 tablespoons olive oil Salt and freshly ground black pepper 1/3 cup grated Parmesan

Preheat oven to 450 degrees F. Add broccoli to a large bowl. Add the shallots, cherry tomatoes, garlic and red pepper flakes with 4 tablespoons oil in large bowl. Sprinkle with salt and pepper. Toss to coat and spread onto large baking sheet. Roast until the stems are tender-crisp and lightly golden brown, about 18 minutes. Grate the Parmesan over the broccoli while it's hot.

Those both sound great! The roasted one especially. I love Parmesan on my veggies. For the first one is that with raw broccoli? Have you ever seen that broccoli they cut up into shreds called broccoli slaw? I bet that would be good for the salad?! Thanks so much for the recipes!

Broccoli slaw? I have not seen that, but it sounds pretty cool. I'm going to check it out next time I do my shopping!
