Okay second year college; just like me first year, it hasn't been easy. However, I will admit living out of residence has definitely helped with my eating/cooking habits.
Anybody who's looking for a cheap, quick, easy meal could definitely take my advice.
- Buy low-sodium broth, veggies of your choice.
-Dice or slice if there are celery.
You can add small chunks of potato so you can get your starch (I use broken spaghetti pasta) But you'll want to boil those in a separate pot and add afterwards.
-Boil your veggies in the broth until hot.
- Add spices like parsley, nutmeg or anything you'd like- I add chili and cayenne pepper because spices help with your metabolism.
And voila, let simmer for about 10-ish minutes or until veggies are tender and (optional) potatoes/noodles are ready and you have yourself a quick, easy meal that can be stored in the fridge for several days on end.
