Sweet Tooth? Stevia Mini Berry Cheesecakes!posted @3:49pm ET on September 6, 2012
I have been experimenting with stevia extract to make desserts! Stevia extract is a sweetener that can be used in place of sugar. This sugar substitute is actually from the stevia plant, so it's natural! It is a great way to get a sweet taste without using refined sugar. It is also calorie-free (which is a nice perk!).
I wanted to share with everyone my latest dessert experiment!
Baby Cheesecakes w/ Berries (Crustless)
2 packages of cream cheese
Stevia Extract (2 tsp) or 8 packets
1 tablespoon ground cinnamon (optional)
1 cup of berries (I used a frozen berry medley from Trader Joe’s)
•Mix together cream cheese, stevia extract , and eggs until smooth. Stir in berries of your choice.
•Pour batter into muffin tin. Bake in preheated oven. 350 degrees for 25 minutes.
