Paleo Pizza gets tricky. Most recipes for pizza are an overload of nuts and very calorie dense. Here is a super easy version to make that is mainly veggies. I made mine with cheese but you definitely replace the cheese with some roasted chicken, or mix in lean ground beef or turkey with the vegetables.


-2 large portobello mushrooms
-cup of baby spinach
-1/2 cup zucchini
-1/2 cup chopped red pepper
-1/2 cup chopped crushed tomatoes
-oz of low fat cheese and/or lean ground beef, chicken, or turkey


Preheat oven to 400 degrees.

Place the mushrooms on a baking sheet and bake for 15 minutes or so.

Meanwhile in a skillet sprayed with olive oil, saute the spinach, red pepper, and zucchini.

Add the crushed tomatoes to the vegetables as well as basil to taste.

When the mushrooms are done scoop the vegetable mixture into the mushroom caps and top with the cheese.

Place back into the oven for 1-2 minutes until the cheese is melted.

Makes 1 serving
