I figured out what to use the shaved brussels sprouts from Trader Joe's for...Paleo slaw! I don't like cole slaw at all...never have and probably never will, so this is my twist on it!

Ingredients:
  • Bag of shaved brussels sprouts

  • Bay of shredded carrots

  • 1/2 cup Apple juice sweetened dried cranberries (no added sugar)

  • 2 tbs. coconut oil

  • 1/4 cup coconut aminos

Directions:

Preheat a skillet with 2 tbs. coconut oil. Once the oil has melted, add in the carrots and brussels sprouts and saute 3-4 minutes. Add in the dried cranberries and coconut aminos and saute 1-2 minutes longer. Serve and enjoy!

This recipe makes a lot too!!!

What's your favorite use for coconut oil? Favorite kind of oil to cook with?
