Today I wanted to feature a quick and easy dinner option that you can make almost instantly! This recipe took me about 10 minutes to make, start to finish! So try it out, up your veggie intake, and power up with some serious protein!
10 Minute Spicy Chicken Fajitas
Directions: Prep the veggies by slicing up the bell pepper, and chopping the zucchini. Preheat a skillet on medium high heat and spray with olive oil. Add all of your vegetables to the pan. Season the veggies the chili powder and cumin to your liking. Once the veggies are cooked about halfway through (around 2-3 minutes) add in your chicken. Continue to saute the chicken and vegetables until the vegetables are cooked and the chicken is warmed. Serve on top of a bowl of baby spinach for a fajita style salad or turn into lettuce wraps for true fajitas! Top with avocado, salsa, and Greek yogurt! Enjoy!
Fajitas are one of my go to meals when I eat out aside from salads...I usually get them without the rice, cheese, and tortillas and they are perfect!
