Today I'm bringing you a gluten free and dairy free peanut butter and jelly cookie recipe. They are almost Paleo except for the peanut butter! Peanuts are legumes, not nuts, so technically they are not Paleo. Some CrossFit boxes, while they promote Paleo, are okay with peanuts. With a few easy changes these cookies can also be made Paleo, they'll just be almond butter cookies instead of peanut butter...either way they're delicious!


- 1/2 cup dried cranberries (no sugar added - Whole Foods sells apple juice-sweetened dried cranberries that are great)
- 1/4 cup all natural peanut butter (peanuts and salt will be the only ingredients)
- 1/4 cup peanut flour
- 1/2 cup coconut flour
- 1 tsp. baking soda
- 2 eggs
- 1 tsp. coconut oil
- 2 tbs. unsweetened applesauce


Preheat your oven to 350 degrees. In a food processor combine the dried cranberries and the peanut butter. Next add in your flours and blend. Last step is the eggs, oil, and applesauce. The mix will be thick, so you may need to scrape down the sides in between adding ingredients. ...    Continue
