Does rinsing off canned veggies REALLY help limit the amount of salt in them?

sure does. the water they are packed in is LOADED with salt.

It should take some of the salt out, but don't forget a lot of it is already absorbed by the veggies.
Better alternative to rinsing them is to find the 'low-salt' or 'no added salt' alternatives. Also, consider decreasing the salt you add to them in the preparation process (if you do at all ) |

When I took a nutrition class my instructor told us not to even bother eating canned veggies, she said most of the nutrients get leached out in the canning process and into the water that it's canned in. Since most of us drain the water were not getting the nutrients. She said frozen veggies were way better, because they are flash frozen without anything being leached out. The only canned veggie I really eat are beets. Frozen ones taste a lot better.
